Fresh and ripe avocados, with pieces of flesh cut out to show the quality, are seen offered for sale in the street market in Ibagué, Colombia, on December 10, 2022. Avocado has always been a highly consumed food in Colombia, due to its high nutritional value, but also because of the highly favorable climatic conditions for avocado cultivation in the Colombian mountains. Although the per capita consumption rate of avocado in Colombia is one of the highest in the world, the vast majority of avocados consumed consist of traditional, green varieties known as “criollo”.
